Shish Kabob

There’s nothing easier than eating a shish kebab at a barbecue. The self-contained skewer of food with veggies and meat that does not require any cutting or plate holding is simply a dream. But, how often do you make shish kebabs that doesn’t involve many people gathering in your backyard? Well, you should definitely consider making some for a weeknight dinner as they are fast, convenient, and delicious. Don’t forget – they can be quite inexpensive as well. Here’s the recipe:

Ingredients

INGREDIENTS

  • 2 lbs of chicken breas about 2 large breasts
  • 1 large bell peppers
  • 1 large sweet onion
  • Salt pepper, and garlic powder to taste.
  • 1 tablespoon of vegetable oil

Instructions

DIRECTIONS

  • Soak about 4 to 6 bamboo skewers in water for 15-20 minutes.
  • Cut the chicken breasts in chunks of 1 1/2 inches. Each breast should yield about 10 pieces for a total of 20 pieces
  • Cut bell peppers into 1 1/2 in pieces.
  • Cut onions into 4 wedges then half each wedge horizontally.
  • Sprinkle the chicken with salt, pepper, garlic powder, and oil.
  • Skewer bell pepper, onion, chicken, onion, bell pepper, onion, chicken, onion…4 times. Always leave 1 inch room on both sides of the skewer.
  • You should have about 5-6 skewers in the end.
  • Grill on medium high heat for 2-3 minutes per side.

Notes

PS: If you want to grill tomatoes, make sure to skewer them separately because they cook faster than all other veggies and meats.
PS2: Sirloin steaks, tri-tip, shrimp, and pork loins are also great to skewer.

I paired my meal with sausage shish kebabs, corn, and baked potatoes. The complete meal was $3.50 for chicken, $0.50 for bell pepper, $0.50 for onions, $0.50 for skewers, and $1.00 for miscellaneous like salt, pepper, etc. $2 for 4 corns, $3.00 for a pack of sausages, and $0.50 for 1 large potato and $0.50 fixings for the potato. The total was $12.00. There are enough leftovers for the next day’s lunch and snacks.
