First make the vanilla sugar syrup. Place water, sugar, vanilla bean (with the beans split and seeds removed). Bring to a boil to combine sugar and water.
Cut X on bottom of peach. Dip peaches in boiling water to peel easily. Put hot peaches in ice bath and lemon juice to stop cooking. Pack the jars with 1 slice of orange. Fill with peaches and 1/2 of the vanilla bean. Fill with sugar syrup. Add 2 tbsp of bourbon to each jar. Place lids and rings on. Water bath for 25 minutes. Turn off heat and let it sit for 5 minutes. Remove from water. Remove rings, clean, store.
