Waffles

Waffles. That’s what’s for breakfast. I have been learning about sourdough starters and what to do with the discarded sourdough starter. Well, who knew there are a plethora of yummy things that can be made with it. This morning, I had some discarded starters from “Teresa.” Yes, I name my sourdough starters. The mother of all my starters is named “Covita,” a cross between COVID-19 and Vita (life in Italian). Covita’s babies are all named after female saints. Anyway, I digress. Ingredients

  • 1 cup of sourdough starter make sure it’s not cold
  • 1 cup of buttermilk if you don’t have buttermilk, substitute with 1 cup of whole milk and 1 tablespoon of lemon juice
  • 1 cup AP flour or wheat flour
  • 1 tbsp of sugar or more if kids like it sweet
  • 1 large egg
  • 1/4 cup of melted unsalted butter
  • 1 tbsp of vanilla extract I always put more
  • Pinch of salt
  • 1 tsp of baking soda

Instructions

  • Mix the first 4 ingredients together, then add the rest. Mix well, but don’t over mix.
  • Let it rest for about 5-10 minutes.
  • Cook in a waffle iron. Usually makes 4 to 5 Belgium waffles.

To Save Leftovers

  • If you have leftovers, wrap them in plastic wrap and place them in a Ziploc bag, and freeze. To use frozen ones, just pop in the toaster oven.

Notes

TOPPINGS
Fruits, fresh or compote, are great over waffles. My favorite is strawberries, but the kids love whipped cream with chocolate or honey. Use your imagination…waffles are simply the vessel for other yummy things!
I personally prefer the Belgium waffle irons. They are usually around $20-$30 and well worth the expense if you eat waffles a lot. At $3.99 or more per box for Belgium waffles from the stores, the iron pays for itself in no time.
SOURDOUGH STARTER (only for making waffles)
If you are just using the sourdough starter to make waffles and pancakes, use 1 cup of water, 1/2 cup of wheat flour, and 1/2 cup of bread flour or AP flour. Let it age for 24 hrs. If you are making sourdough bread from the starter, you should definitely measure and weigh your ingredients.
