Sourdough Bread With AP Flower

Did you get your sourdough starter going? If you did, let’s make some sourdough bread!!! I understand that there has been a shortage of flour in many areas and most breads required bread flour. I will share 2 recipes for sourdough bread, 1 using bread flour and another using (easier to find) all purpose flour (ap flour). These recipes have been adapted from King Arthur’s Flour with slight changes to fit my family’s pallets. Here’s the RECIPE with AP FLOUR:

Ingredients

  • 1 cup 227g of ripe sourdough starter
  • 1 1/2 cups 340g room temperature water
  • 1 1/2 teaspoons of instant yeast
  • 1/2 tablespoon of salt
  • 5 cups 602g all purpose flour

Instructions

  • Mix all ingredients together except for the salt in a large bowl.
  • Cover and let it rest for about 1 hour or until doubled.
  • Sprinkle salt and stretch the dough from one side to another as if folding a book (see picture below).
  • Repeat this on all 4 sides.
  • Let the dough rise for another hour.
  • Slowly pour the dough o to a well-floured surface and divide it into 2 pieces.
  • Shape the dough and place it on a parchment paper-lined baking sheet. Let it rise again for 1 hour.
  • Preheat oven to 425 degrees Fahrenheit.
  • Move the dough slowly into the oven and bake on a baking sheet or pizza stone.
  • Spray the oven with water for a nice crust when you first place dough in the oven. Bake for 20 to 25 minutes until the internal temperature reaches 210 degrees.
  • If you like a darker loaf, leave it in the oven a little longer.
  • Remove and cool on a rack for 30 to 60 minutes.

Notes

TIP: Place leftover bread in a plastic bag and seal it. It helps keep it fresh longer.
TIP 2: Home-made bread does not last as long as store-bought bread.
